One of the things I love best about this cookbook is whether you have an Insta Pot or still love your stovetop pressure cooker, you can make these dishes. I am a huge fan of my Insta Pot and hardly ever use my crockpot or stovetop pressure cooker, although my husband prefers the stovetop. These recipes are not only Keto friendly but family friendly. Like another cookbook I have, I know that my kids would eat any of the items listed and in many cases, want to make it prior to me being home in an effort to help out. Insta Pots have become a way for even the busiest of us to not choose something quick and unhealthy. Instead, you can have delicious, healthy and quick. Even better is that a lot of these foods are in my Keto Meal Plan. Eating on a whim has never been made easier.

This book makes eating a ketogenic diet not only easy but delicious! I cooked the philly cheese steaks for my parents who used to live in Philadelphia and said that it gives an authentic taste without the carbs. The recipes are so simple to follow and so packed with flavor that I don’t feel like I am deprived from great tasting food. I recommend this to anyone looking to make flavorful meals with keto!!

Essential Ketogenic Diet Pressure Cooking by Jane Downes is a small but mighty Keto cookbook for those using a pressure cooker or Instant Pot. Downes begins the book with some of the very basics of keto cooking and a more in-depth explanation of pressure cooking and cookers.The recipes start with the basics (like condiments), breakfast, vegetables and sides, soups and stews, fish and shellfish, poultry, beef and pork, and ends with desserts. There are over 80 recipes, each with prep times, amount of time to cook, what type of release is used, and total cook time.It also includes calories, carbs, fat, protein, sugars, and fiber as well as macronutrients and if there are any special dietary restrictions such as dairy-free, gluten-free, nut-free, or vegetarian. Downes completes the book with pressure cooker times charts and other resources to make converting recipes to the pressure cooker easier.This isn't your typical cookbook. I found these recipes to be very different from the Instant Pot (it's what I have) recipes that I had been researching and very different from the keto recipes that I had seen. There's definitely some fancier recipes like creme brulee and beef bourguignon. There are multiple international recipes as well.I think that this would be a great book for those wanting to use their pressure or multicooker as well as eat keto. The big thing is that the Essential Ketogenic Diet Pressure Cooking book claims to be low-effort, big-flavor keto recipes for any pressure cooker or multicooker and it lives up to that claim.I received this book in exchange for an honest review.

I received an Instant Pot for my birthday and was more than a little intimidated and not at all sure how I would use it. The Essential Ketogenic Diet, Pressure Cooking answered my questions and relieved my doubts about using the Instant Pot, while providing inspirational ideas and clear step-by-step recipes for fast and healthy foods I could prepare. Kudos to Jane Downes for giving readers an instructive, informative and beautiful cookbook!

Update 12/5/2018I've now made the Tom Ka Soup and the White Chicken Chili twice! This has become my FAVORITE keto cookbook and my family asks for these recipes to be cooked again more than any other cookbook I own. I love that my Instant Pot makes it easy to make delicious food with minimal effort. You won't regret getting this book.Original ReviewThis is a solid book for people to make weeknight meals without fussy ingredients. You will not need to make trips to get specialty items (except maybe seafood), most recipe ingredients are easily available from a regular grocery store. Perfect for those new to keto or cooks just starting to use their pressure cooker. The recipes we've tried in our Instant Pot so far have been very tasty!If you limit dairy, the author provides alternatives to milk products in most of the recipes. With all the non-dairy options, Paleo eaters should be able to use this book as well.Recipes we've tried:-- Hungarian Mushroom Soup (p.78) | My 12 year old daughter made this recipe with supervision but mostly independently. Everyone in my family ate it and asked it be put in regular rotation, including my 7 year old.-- Creamy Artichoke Chicken (p.122) | Absolutely dynamite! I subbed dairy for the coconut cream and thickened with xanthan gum. Leftovers are great thinned with extra chicken broth and eaten as a soup.Other recipes I can't wait to try:Tom Kha Soup, p. 68 | White Chicken Chili, p. 82 | Chunky Clam Chowder, p. 84 | Creamy Salsa Verde Chicken, p. 101 | Beef Bourguignon, p. 127 | Hawaiian Pork, p.148*A review copy was provided to experiment and give my opinions.
